One Pan Pasta: Easy to make and very healthy

Hi everyone,
This week Health Tuesday I will introduce you to this awesome recipe. Make a delicious and healthy pasta in just one pan. No need to worry about cleaning up after cooking, washing many different pots and pans.

What you will need:

  • 12 ounces linguine – I just used 3/4 of a 16-ounce box
  • 12 ounces, which is about 3/4 of a pint of cherry or grape tomatoes, washed and halved
  • 1 red onion, thinly sliced (about 2 cups)
  • 4 cloves garlic, peeled and thinly sliced
  • 2 teaspoons sea salt
  • 1/4 teaspoon freshly ground pepper
  • 1/2 teaspoon red pepper flakes
  • 2 sprigs basil, plus some extra torn leaves for garnish
  • 2 tablespoons extra virgin-olive oil
  • 4 1/2 cups water
  • freshly shredded parmesan cheese for topping the pasta


What you have to do:

Get out a large straight-sided skillet pan and put in your pasta, tomatoes, red onion, garlic, salt, pepper, red pepper flakes, basil sprigs, olive oil and pour the in the 4 1/2 cups water. Pretty easy right?  You’re truly throwing everything into the pan at the same time.  Love it!




Turn up the heat to high and bring the water to a boil.





Let the water come to a full boil.  You will see bubbles on the side of the pan at first, but wait untill you see bubbles all over the pan.  


Once your water comes to a full boil, set your timer to 9 minutes.  Stand by the stove and using tongs, lift and move the pasta around every so often so that it doesn’t stick to the bottom of the pan.





You will notice that most of the water is evaporating and getting thicker, and everything is starting to cook down like the tomatoes and the onions.


Test the pasta at 9 minutes and it should be al dente!  Turn off the heat and give the pasta a few quick tosses. There will be some liquid at the bottom of the pan, but don’t fret, the liquid will thicken up and turn into a sauce.  Doesn’t that pasta look fantastic


Serve up the pasta in large bowls and top with some shredded Parmesan cheese and fresh basil. The basil leaves really add that extra punch of flavor, so be sure to top everyone’s pasta with a few leaves. Pair this pasta with a nice green salad or some garlic bread.

Good morning everyone,
This Healthy Tuesday I want to talk about the truth about the food that we eat everyday.
I remember having a conversation with my uncle one time and he once told me the food is good nowsaday, they don't go bad as fast as the food we eat years ago. Little does he know, the food that goes bad less slowly is the one that is harming and weaken our immune system everyday.
Sadly, "those" kind of food is everywhere we do nowsaday. Fastfood is no longer the only bad food. The chicken you buy at the grocery store, the fruit you buy at the grocery store and maybe the milk and juice you buy at the grocery store, the potential threat is there.
Know what you buy and learn how to read the labels of your food will change your life in a whole different way and help you eat longer.

Healthy Tuesday: lemon & chive ricotta bruschetta

For this week healthy Tuesday, I would like to introduce to you guys something a little bit more sophisticated but still very simple and easy to make and most important of all, extremely healthy.
And of course, I am so not the mastermind behind this.

What you'll need:

6-8 slices whole grain bread or rye bread ( I personally prefer rye bread)
drizzle of olive oil
1 clove garlic (use half to rub bread with, mince other half for ricotta mixture)
1/2 cup fresh, high quality ricotta cheese
1-2 tablespoons lemon juice
1/2-1 teaspoon lemon zest
1-2 teaspoons honey
2 tablespoons chopped chives
salt & pepper
1 tomato, sliced
basil (to go on top)
sprouts (to go on top)


What you'll do:

Drizzle bread slices with olive oil and salt. Toast under the broiler, or grill.
Slice garlic clove in half. Once the bread is done and nicely toasted, rub it with the open side of the garlic. Set aside.
Slice tomato, sprinkle it with some salt and set aside.
Mix together ricotta, lemon juice, lemon zest, minced garlic, honey, salt and pepper. Taste and adjust.
Assemble and top with chopped basil and sprouts.

Health Tuesday: Greek Pasta Salad

What you will need:

For the Salad
  • 5 oz dry pasta of chice
  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • 1 cup  olives
  • ½ cup red onion
  • 3 oz   feta cheese
  • 5 Fresh Oregano leafs
For the Dressing
  • 1 tsp.  ground mustard
  • ¼ cup white wine vinegar
  • ½ cup olive oil
  • ½ tsp. dried oregano
  • ½ tsp. salt
  • ½ tsp. pepper
  • ¼ tsp. dried basil
What you will do:

Cook pasta, wash it and drain.
In a bowl, add the salad ingredients and mix well.
In a small bowl mix all the dressing ingredients and stir well until it all combines nicely.
Pour the Dressing into the salad bowl and refrigerate.
To serve – Add some chopped Oregano, Basil, Salt and Pepper.
